Pasta Party!



Summer Pasta Salad


I love summer, and I love summer dishes. Summer dishes are always so light and refreshing, yet they're packed with bold flavors. If this pasta salad isn't the perfect summer dish, then I don't know what is! The salad is full of some yummy and crunchy veggies, and the dressing is so refreshing with acidity and light sweetness, as well as some spice from the Dijon mustard. As you can see below, this dish is so easy- only 4 steps! So throw a summer party, and have your friends come over and help you whip up this amazing summer pasta salad! Ingredients:

Salad
4 cups cooked pasta (spiral, tubular, and bow-tie work really well- but get creative with your pasta choice!)
I used some really fun bow-tie pasta! So pretty!!
2 tomatoes, seeded and diced
1 cup diced red onion
Bunch of spinach, torn (be sure to thoroughly wash your spinach first!)
1 cucumber, seeded and chopped (check out Episode 4 of SWAGourmet! to learn how to perfectly seed a cucumber)
Grated Parmesan cheese, to taste
Crumbled feta cheese, to taste
Salt/black pepper, to taste

Dressing
3/4 cup olive oil
1/4 cup red wine vinegar
1/8 cup Balsamic vinegar
1 tbsp. Dijon mustard
1/2 tsp. honey
Salt/black pepper

1. After boiling your pasta and prepping your veggies, combine the pasta, diced tomatoes, red onions, torn spinach, cucumber, cheeses, and salt/pepper in a large bowl.
2. Whisk together all the dressing ingredients in a medium bowl.
3. Pour the dressing on the salad and thoroughly combine.
4. Refrigerate covered if necessary, but if you're ready to eat, then dig in and enjoy! See, I told you- pretty easy recipe, and perfect for a summer party!
